Lemon Sole with Pak Choi

Fantastic fish dish with an oriential twist…


Cook 70g of noodles according to pack instructions. Meanwhile, place a 100g lemon sole fillet in a lightly buttered shallow oven-proof dish. Sprinkle with 1tsp of chopped fresh coriander and add enough water to just cover the base of the dish. Cover with foil and cook in a pre-heated oven set at 180˚C for 12mins.

While the fish is cooking, bring a large pan of salted boiling water to the boil, reduce the heat to a gentle simmer. Put 1 pak choi, with the leaves separated, into the water and cover. Simmer for 2mins. Remove the cooked pak choi with a perforated spoon.

To serve arrange the lemon sole, garnished with some chopped fresh coriander, on a plate alongside the pak choi, drizzled lightly with oyster sauce, and the cooked, drained noodles.
