
Delicious healthy fish dish…
Part boil 150g of peeled sweet potatoes, drain, cool and thinly slice them.
While cooling, boil 150g of spinach for 30secs, drain and make sure to squeeze out any excess water.
Put a third of the spinach on the bottom of a small ovenproof dish, grate a little nutmeg over and spread about 20g of low fat formage frais on top.
Add a layer of the potato using again about a third. Repeat twice, ending with a layer of sweet potato on top.
Season with herb salt and place in a pre-heated oven set at 180C (gas mark 4). Cook for 30-40 minutes.
Around 10mins before the sweet potatoes are ready, brush a 100g piece of haddock with oil, season with herb salt and char grill on a griddle pan until cooked to your liking. To serve, arrange the spinach and sweet potato in the centre of the plate and place the fish on top. Squeeze a little lemon juice over the fish and serve.
