Brush 180g of sweet potato wedges with a little olive oil and toss in herb salt. Bake for 45mins in the oven at 180ºC.
Wipe and cut 100g of mushrooms, brushing lightly with oil. Bake in oven at the same time as sweet potato wedges.
Brush a non-stick frying pan lightly with oil and fry an egg. Heat through 75g of baked beans. Serve the eggs and beans with the sweet potato wedges and mushrooms.
