Marinate 100g of extra lean cubed lamb in a large bowl marinate for 1-2hrs in the fridge with 1 large finely chopped chilli, 1 small crushed garlic clove, 1tsp of runny honey, 2tsp of soy sauce, 1dsp of chopped fresh coriander, 1tsp lime juice, 1dsp of sweet sherry and a pinch sea salt and black pepper.
Once marinated, take the lamb out of the fridge and thread the cubes through a wooden skewer with pieces of red onion and either red or yellow pepper between each cube of lamb – to make this easier, soak the skewer in water first. Grill under a medium heat for about 10mins, turning frequently.
Serve in a warmed small wholemeal pitta bread filled with lettuce tomato and cucumber.
