
It's large and it's lovely…
Cook 70g of noodles according to pack instructions in water and drain. Heat 300ml of vegetable stock and a slice of ginger until simmering. Add 100g of button mushrooms, a peeled carrot cut into fine slices and 90g of broccoli florettes. After 10mins add 100g of firm tofu slices.
Add the noodles, 1tbs of finely chopped coriander and 2 spring onions. Drizzle over a little soy sauce, season and garnish.
